The ‘Assemblage’

The ‘assemblage’ is the blending of still wines from different villages of the Champagne region, and, often years to create a ‘cuvée’ or blend, ready for bottling and second fermentation.

Only three varieties of grapes are legally allowed to be part of the ‘assemblage’ of Champagne wines.

Pinot Noir
This noble variety imparts structure and power to the blend, as well as aromas of red fruits. Pinot Noir is a white-pulped grape known since the fourteenth century, but it has proven to be fragile and vulnerable to frosts. This variety brings vinosity, body and longevity to wines, with incomparable red fruit aromas that mingle with complex pastry or even grilled tones.

Pinot Meunier
Much less sensitive to rough weather conditions due to the later appearance of its buds, it can withstand all latitudes. Bringing precocity and freshness to wine, it is appreciated for its less full-bodied but more floral and fruity aromas. This variety develops quickly over time and gives a certain roundness to a Champagne wine.

Chardonnay
This variety is the king of the great white burgundies in the way that Pinot Noir is king of the reds. In Champagne, it reigns alone on the ‘Côte des Blancs’ and contributes, in varying percentages, to the making of most champagnes, excluding the Blanc de Noirs, which is exclusively produced from Pinots. Chardonnay is the bringer of finesse; it provides a wine with floral and sometimes mineral aromas. Generally characterised by seductive citrus aromas, Chardonnay gives off flavours of melon, pineapple and above all a delicious taste of peach. Hazelnut and pastry tones often balance its bouquet. Its slow development makes it ideal for ageing.
