Xavier Rousset’s favourite champagnes from Pierrel, part of ‘Les Traditions’, ‘Les Floressences’ and ‘Les Oressences’ ranges (from £15.63 + VAT and delivery. (Please ask for details).
1. Pierrel, ‘Les Traditions’ Brut Noirs & Blancs
Ripe pear, hint of white pepper on the nose, biscuity undertone. On the palate, showing some weight well balance by a refreshing acidity, a Champagne that could do with some slightly spicy food such as pan fried scallops with ginger foam, as served in Le Manoir Aux Quat’Saisons. Eight out of ten for quality!
2. Mignon & Pierrel, ‘Les Floressences’ Brut – gold medallist at the International Wine Festival, 2004
Flowery nose, expressive with a touch mineral, the champagne is a bit more discreet on the palate but proves to have a good texture and well integrated bubbles. This Champagne would improve with a further two years in your cellar.
3. Pierrel, ‘Les Oressences’ Chardonnay
Nose developing notes of citrus, floral and a hint yeasty. The palate is pleasant, balanced by a lively refreshing acidity. Well suited for aperitif but could be a very interesting match with a carpaccio of tuna served with fennel.
